African Chicken Curry – Kuku Paka

  • 2 pounds chicken, cut into pieces
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 teaspoons curry powder
  • 1 can (400 ml) coconut milk
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 green chilies, chopped
  • 1/4 cup cilantro, chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the garlic and ginger, and cook for another minute.
  4. Add the chicken pieces and brown them on all sides.
  5. Sprinkle in the curry powder and mix well to coat the chicken.
  6. Pour in the coconut milk and chicken broth, stir to combine.
  7. Bring to a simmer, then cover and cook for 30 minutes or until the chicken is cooked through.
  8. Add lemon juice, salt, black pepper, and green chilies, stir well.
  9. Garnish with chopped cilantro before serving.
