  • 2 pounds pork loin
  • 1 cup apple cider
  • 2 sweet potatoes
  • 1/4 cup butter
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • 2 cloves garlic

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the pork with salt, pepper, and thyme.
  3. In a skillet, heat olive oil over medium-high heat and sear the pork on all sides.
  4. Add apple cider to the skillet and bring to a simmer.
  5. Transfer the pork to the oven and roast for 25-30 minutes.
  6. While the pork is cooking, peel and chop the sweet potatoes.
  7. Boil the sweet potatoes until tender, about 15-20 minutes.
  8. Drain and mash the sweet potatoes with butter, heavy cream, salt, and pepper.
  9. Let the pork rest before slicing.
  10. Serve the sliced pork with mashed sweet potatoes.
