  • 2 sweet potatoes
  • 1 pound chicken breast
  • 1 cup barbecue sauce
  • 1 teaspoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup green onions, chopped
  • 1 cup corn, cooked

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork. Bake for 45-60 minutes until tender.
  3. While the sweet potatoes are baking, heat olive oil in a skillet over medium heat.
  4. Season the chicken breast with salt and pepper, then cook in the skillet for 6-7 minutes on each side until fully cooked.
  5. Remove chicken from skillet and shred it. Toss shredded chicken with barbecue sauce.
  6. Once sweet potatoes are done, slice them open and fluff the insides with a fork.
  7. Top the sweet potatoes with the BBQ chicken, corn, and green onions.
