Ingredients

  • 2 medium sweet potatoes
  • 1 pound cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 cup diced bell pepper
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and poke holes in sweet potatoes, then bake for 45 minutes or until tender.
  3. In a skillet, heat olive oil over medium heat. Add bell pepper and cook until softened.
  4. Stir in shredded chicken, BBQ sauce, black beans, and corn. Cook until heated through.
  5. Once sweet potatoes are done, slice them open and fluff the insides with a fork.
  6. Top each sweet potato with the BBQ chicken mixture.
  7. Serve warm and enjoy!
