Beef Enchilada Casserole with Corn Tortillas

A delicious and easy Beef Enchilada Casserole made with corn tortillas, perfect for family meals.

  • 1 can black beans, drained
  • 2 cups corn tortillas, cut into strips
  • 2 cups enchilada sauce
  • 1 cup shredded cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned.
  3. Add black beans, cumin, chili powder, and garlic powder to the beef; stir well.
  4. In a 9×13 inch baking dish, layer half of the corn tortilla strips on the bottom.
  5. Spoon half of the beef mixture over the tortillas.
  6. Pour half of the enchilada sauce over the mixture and sprinkle with half of the cheese.
  7. Repeat the layers with the remaining ingredients.
  8. Bake in preheated oven for 30 minutes.
  9. Let cool for a few minutes before serving.

Notes

  • For extra flavor, add diced onions and bell peppers to the beef mixture.
  • Serve with sour cream and guacamole for a delicious touch.
