1 cup unsalted butter, softened
1/2 cup powdered sugar
2 cups all-purpose flour
1 cup finely chopped pecans
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup additional powdered sugar for coating
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, cream together the butter and the 1/2 cup of powdered sugar until smooth.
Mix in the vanilla extract.
Gradually blend in the flour, then stir in the pecans and salt.
Shape the dough into 1-inch balls and place them on ungreased cookie sheets.
Bake for 10-12 minutes in the preheated oven. The bottoms should be lightly golden.
Remove from oven and let cool for a few minutes. Roll the warm cookies in the additional powdered sugar before transferring to a wire rack to cool completely.
Notes
