  • 1 cup vegetable oil
  • 4 eggs
  • 3 cups grated carrots
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1/2 teaspoon salt
  • 1 package cream cheese
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat eggs, oil, and vanilla. Add to flour mixture, then stir in grated carrots.
  4. Pour half of the batter into a springform pan.
  5. In a separate bowl, beat cream cheese, sour cream, and sugar until smooth. Spread over the batter.
  6. Top with the remaining batter and smooth the surface.
  7. Bake for 45-50 minutes or until a toothpick comes out clean.
  8. Cool in the pan before removing.
