- 2 cups all-purpose flour
- 2 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 3 cups grated carrots
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 package cream cheese
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
- Preheat oven to 350°F (175°C).

- In another bowl, beat eggs, oil, and vanilla. Add to flour mixture, then stir in grated carrots.

- Top with the remaining batter and smooth the surface.
