  • 1 package tortellini
  • 2 cups enchilada sauce
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt to taste
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and brown the ground beef. Season with garlic powder, onion powder, chili powder, cumin, and salt.
  3. Cook the tortellini according to package instructions, then drain.
  4. In a large bowl, combine the cooked beef, tortellini, and enchilada sauce.
  5. Transfer the mixture to a greased baking dish. Sprinkle shredded cheese on top.
  6. Bake for 20-25 minutes or until the cheese is bubbly and golden.
  7. Garnish with chopped cilantro before serving.
