Chicken Enchiladas are a must-try for dinner!

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup red enchilada sauce
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1/2 cup diced onions
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
  3. In a bowl, combine cooked chicken, half of the enchilada sauce, cheese, garlic powder, cumin, salt, and pepper.
  4. Spoon the chicken mixture into each tortilla, roll them up, and place them seam-side down in a baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with remaining cheese.
  6. Bake for 20-25 minutes until bubbly and golden.
  7. Let cool slightly before serving.
