Chicken Enchiladas are a must-try for dinner!

Ingredients

  • 2 cups shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the shredded chicken with half of the enchilada sauce.
  3. Fill each tortilla with the chicken mixture and a sprinkle of cheese, then roll them up and place seam-side down in a baking dish.
  4. Pour the remaining enchilada sauce over the top and sprinkle with remaining cheese.
  5. Bake for 20-25 minutes until golden and bubbly.
  6. Serve hot with sour cream and cilantro on top.

Notes

  • Try adding black beans for extra protein.
  • For spice, add jalapeños to the filling.
