Chicken Enchiladas with Sour Cream White Sauce

Delicious and easy Chicken Enchiladas smothered in a creamy white sauce.

  • 2 cups shredded chicken
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1/2 cup diced onion
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F.
  2. In a skillet, heat olive oil and sauté onions until translucent.
  3. Add shredded chicken and half of the enchilada sauce, stirring until well combined.
  4. In each tortilla, place a portion of the chicken mixture, add some cheese, then roll it up.
  5. Place the rolled tortillas in a baking dish and pour remaining enchilada sauce on top.
  6. Spread sour cream over the sauce and top with remaining cheese.
  7. Bake for 20-25 minutes until heated through and cheese is bubbly.

Notes

  • For extra flavor, add spices like cumin or paprika to the chicken mixture.
  • Garnish with fresh cilantro before serving.
