2 eggroll wrappers
1 cup cooked chicken, shredded
1/2 cup black beans, drained and rinsed
1/2 cup corn, cooked
1/2 cup bell peppers, diced
1/4 cup green onions, chopped
1 teaspoon cumin
1/2 teaspoon chili powder
1 cup shredded cheese
1 egg, beaten (for sealing)
Instructions
In a bowl, combine shredded chicken, black beans, corn, bell peppers, green onions, cumin, chili powder, and cheese.
Lay an eggroll wrapper on a clean surface and place a spoonful of the mixture in the center.
Fold the sides in and roll tightly, sealing with beaten egg.
Fry eggrolls in hot oil until golden brown.
Drain on paper towels before serving.
