Cilantro Lime Quinoa Salad

A refreshing and healthy salad that combines the flavors of cilantro and lime with nutritious quinoa.

  • 1 cup quinoa
  • 2 cups water
  • 1 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon salt
  • 1/4 cup red onion, diced
  • 1 bell pepper, diced
  • 1 cup corn, cooked
  • 1 avocado, diced

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and let simmer for about 15 minutes until water is absorbed.
  4. Fluff quinoa with a fork and let cool.
  5. In a large bowl, combine cooled quinoa, cilantro, lime juice, salt, red onion, bell pepper, corn, and avocado. Toss gently to mix.
  6. Serve chilled or at room temperature.
