Classic Hearty Reuben Bake

A delicious and comforting Reuben casserole that brings all the classic flavors together in a hearty dish.

  • 1 pound rye bread, cubed
  • 1 pound corned beef, shredded
  • 1 pound sauerkraut, drained
  • 1 pound Swiss cheese, shredded
  • 1 cup thousand island dressing
  • 4 large eggs
  • 2 cups milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cubed rye bread, shredded corned beef, drained sauerkraut, and shredded Swiss cheese.
  3. In another bowl, whisk together the thousand island dressing, eggs, and milk until well combined.
  4. Pour the egg mixture over the bread mixture and toss to coat evenly.
  5. Transfer the mixture to a greased baking dish and spread it out evenly.
  6. Bake for 45-50 minutes or until the top is golden brown and the casserole is set.
  7. Let it cool for a few minutes before serving.

Notes

  • This dish can be prepared a day in advance and refrigerated until ready to bake.
