3 pounds pot roast
1 tablespoon olive oil
4 slices turkey bacon
2 large onions, sliced
4 cloves garlic, minced
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
Instructions
Preheat your oven to 325°F (163°C).
In a large skillet, heat the olive oil over medium-high heat. Add the turkey bacon and cook until crisp. Remove and set aside.
In the same skillet, sear the pot roast on all sides until browned. Remove and set aside.
Add the onions and garlic to the skillet, cooking until softened and slightly caramelized.
In a large roasting pan, combine the pot roast, cooked turkey bacon, onions, garlic, beef broth, Worcestershire sauce, and thyme. Season with salt and pepper.
Cover and roast in the preheated oven for about 3 hours, or until tender.
Serve warm with your choice of sides.
