Corned Beef and Swiss Reuben Quesadillas

These Corned Beef and Swiss Reuben Quesadillas are a quick and delicious way to enjoy a classic flavor combination. Perfect for a snack or light meal!

Ingredients

  • 2 cups shredded corned beef
  • 1 cup shredded Swiss cheese
  • 1/2 cup sauerkraut, drained
  • 1 tablespoon Dijon mustard
  • 4 large flour tortillas
  • 2 tablespoons butter

Instructions

  1. In a bowl, mix together the corned beef, Swiss cheese, sauerkraut, and Dijon mustard.
  2. Heat a skillet over medium heat and add a tablespoon of butter.
  3. Place a tortilla in the skillet and add half of the mixture on one half of the tortilla.
  4. Fold the tortilla over and cook until golden brown, about 3-4 minutes.
  5. Flip and cook the other side until golden brown and cheese is melted.
  6. Repeat with remaining ingredients.
  7. Cut into wedges and serve warm.

Notes

  • For extra flavor, add some chopped green onions or extra spices to the filling.
  • These quesadillas can be enjoyed with a side of ranch dressing or thousand island for dipping.
