  • 1 cup cottage cheese
  • 1/2 cup honey
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the shredded carrots, cottage cheese, and honey until well combined.
  3. In another bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Fold in the eggs and walnuts, if using.
  6. Pour the batter into a greased baking dish and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool before cutting into bars.
