- 2 cups shredded carrots
- 1 cup cottage cheese
- 1/2 cup honey
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup chopped walnuts (optional)
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the shredded carrots, cottage cheese, and honey until well combined.
- In another bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Fold in the eggs and walnuts, if using.
