  • 1 pound boneless, skinless chicken breast
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions; drain and set aside.
  2. In a bowl, coat the chicken breast with Cajun seasoning.
  3. In a skillet, heat olive oil over medium heat and cook the chicken until golden brown and cooked through. Remove and slice.
  4. In the same skillet, sauté the onion and bell pepper until soft, then add garlic and cook for an additional minute.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  6. Add the Parmesan cheese, stirring until melted and the sauce thickens.
  7. Add the cooked fettuccine and sliced chicken, tossing until everything is well coated in the sauce.
