- 12 large pasta shells
- 1 cup ricotta cheese
- 1 cup pumpkin puree
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 cup mozzarella cheese, grated
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 2 cups marinara sauce
- Preheat the oven to 350°F (175°C).
- Cook the pasta shells according to package instructions until al dente. Drain and set aside.
- In a mixing bowl, combine ricotta cheese, pumpkin puree, cinnamon, nutmeg, mozzarella cheese, Parmesan cheese, and parsley. Mix well.
- Stuff each pasta shell with the pumpkin ricotta mixture.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Place the stuffed shells in the baking dish and top with remaining marinara sauce.
