Creamy Pumpkin Ricotta Stuffed Shells Recipe

  • 12 large pasta shells
  • 1 cup ricotta cheese
  • 1 cup pumpkin puree
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup mozzarella cheese, grated
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a mixing bowl, combine ricotta cheese, pumpkin puree, cinnamon, nutmeg, mozzarella cheese, Parmesan cheese, and parsley. Mix well.
  4. Stuff each pasta shell with the pumpkin ricotta mixture.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Place the stuffed shells in the baking dish and top with remaining marinara sauce.
  7. Bake for 25-30 minutes until heated through and the cheese is bubbly.
  8. Serve warm and enjoy!
