Creamy Smothered Chicken Rice: A Comforting One-Pan Dinner

Ingredients

  • 4 chicken thighs
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Add chicken thighs and brown on both sides.
  2. Remove chicken and set aside. In the same pan, sauté onion and garlic until soft.
  3. Add rice and toast for a minute. Pour in chicken broth and bring to a boil.
  4. Return chicken to the pan, reduce heat to low, cover, and simmer for 20 minutes.
  5. Stir in heavy cream and paprika, and cook for another 5 minutes.
  6. Season with salt and pepper before serving.

Notes

  • You can use chicken breasts instead of thighs if preferred.
  • Add vegetables like peas or carrots for more nutrition.
