Creamy Vegetable Soup

A delicious and comforting creamy vegetable soup featuring turkey bacon.

  • 4 strips turkey bacon
  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups potatoes, diced
  • 1 cup frozen peas
  • 1 cup heavy cream
  • salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy.
  2. Remove bacon and add olive oil, onion, carrots, and celery to the pot; sauté until tender.
  3. Add garlic and cook for another minute.
  4. Stir in vegetable broth and potatoes, bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Add peas and cream, and cook until heated through.
  6. Crumble the reserved bacon and stir it back into the soup. Season with salt and pepper before serving.

Notes

  • For a vegan version, omit the bacon and cream and substitute with coconut milk.
