Crock Pot Birria Tacos

  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 4 cups beef broth
  • 8 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a skillet, heat olive oil over medium heat and sear the beef on all sides.
  2. In a blender, combine garlic, onion, chiles, cumin, oregano, paprika, and beef broth. Blend until smooth.
  3. Place the seared beef in the crock pot and pour the blended sauce over it.
  4. Cover and cook on low for 8 hours or until the beef is tender.
  5. Shred the beef with two forks and serve in tortillas, topped with cilantro and lime juice.

Notes

  • Consider using freshly made tortillas for the best flavor.
  • You can add cheese for extra richness.
