- 3 pounds beef chuck roast
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 dried guajillo chiles
- 2 dried ancho chiles
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon paprika
- 4 cups beef broth
- 8 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- In a skillet, heat olive oil over medium heat and sear the beef on all sides.
- In a blender, combine garlic, onion, chiles, cumin, oregano, paprika, and beef broth. Blend until smooth.
- Place the seared beef in the crock pot and pour the blended sauce over it.
- Cover and cook on low for 8 hours or until the beef is tender.
- Shred the beef with two forks and serve in tortillas, topped with cilantro and lime juice.
