Crockpot Chicken Enchilada Casserole

A delicious and easy recipe for a comforting family meal made in a crockpot.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 2 cups enchilada sauce
  • 8 corn tortillas, cut into strips
  • 1 cup shredded cheese

Instructions

  1. In the crockpot, layer half of the chicken, black beans, corn, diced tomatoes, and enchilada sauce.
  2. Add half of the tortilla strips on top, followed by half of the cheese.
  3. Repeat the layers with the remaining ingredients.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours.
  5. Once cooked, serve hot with your favorite toppings.

Notes

  • This dish works great with leftover chicken or rotisserie chicken.
  • Top with avocado, sour cream, or cilantro for extra flavor.
