Easy Ground Beef Enchiladas

Enjoy a quick and easy variation of traditional enchiladas made with ground beef and flavorful spices.

  • 1 pound ground beef
  • 1 can enchilada sauce
  • 2 cups shredded cheese
  • 8 flour tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add garlic powder, onion powder, cumin, chili powder, and salt to the beef, stirring well.
  4. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  5. Place a portion of the beef mixture and a sprinkle of cheese into each tortilla, roll it up, and place it seam side down in the dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  7. Bake for 20 minutes or until the cheese is bubbly and golden.
  8. Let cool for a few minutes before serving.

Notes

  • For added flavor, mix in some diced onions and bell peppers with the beef.
  • Top with sour cream and guacamole before serving.
