  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned.
  3. Add the enchilada sauce, cumin, chili powder, salt, and pepper to the beef mixture and stir well.
  4. Warm the tortillas in a microwave for 30 seconds to make them pliable.
  5. Spoon a portion of the beef mixture onto each tortilla, sprinkle with cheese, roll them up, and place them in a baking dish.
