  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • 6 cups vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 2 cups spinach
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add carrots and celery; cook for a few minutes.
  4. Stir in green beans and thyme; cook for another 2 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Add chickpeas and spinach; simmer for 5-10 minutes.
  7. Stir in lemon juice, and season with salt and pepper before serving.
