Easy Shredded Chicken Enchilada Casserole Recipe

This Easy Shredded Chicken Enchilada Casserole is sure to please everyone at the table.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 can (10 oz) enchilada sauce
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 2 cups shredded cheese
  • 12 corn tortillas

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, enchilada sauce, black beans, corn, and 1 cup of cheese.
  3. Layer the ingredients by placing a layer of half the tortillas in a greased casserole dish.
  4. Add half of the chicken mixture on top of the tortillas.
  5. Repeat the layers and top with remaining cheese.
  6. Bake for 25-30 minutes until cheese is bubbly and golden.

Notes

  • Serve with sour cream and cilantro for added flavor.
  • Leftovers can make a great lunch!
