  • 4 slices bacon
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 large eggs

Instructions

  1. Peel and grate the potatoes, then rinse and squeeze out excess moisture.
  2. Heat oil in a skillet over medium heat and add the grated potatoes, cooking until crispy.
  3. In another pan, cook the bacon until crispy, then crumble and set aside.
  4. In the bacon fat, whisk in the flour and cook for a minute, then slowly add chicken broth and cream, stirring continuously until thickened.
  5. Fry the eggs sunny-side up.
  6. Assemble by placing hash browns on a plate, topping with gravy, bacon, and fried eggs.
