  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup roasted sweet potatoes
  • 1 cup black beans
  • 1 cup corn
  • 1 avocado, sliced
  • 1/4 cup pumpkin seeds
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse quinoa under cold water and drain.
  2. In a saucepan, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
  4. While quinoa cooks, roast sweet potatoes in the oven at 400°F for about 20 minutes.
  5. In a large bowl, combine quinoa, sweet potatoes, black beans, corn, and spices.
  6. Drizzle olive oil and mix well.
  7. Top with sliced avocado and pumpkin seeds before serving.
