- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup roasted sweet potatoes
- 1 cup black beans
- 1 cup corn
- 1 avocado, sliced
- 1/4 cup pumpkin seeds
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- Rinse quinoa under cold water and drain.
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
- While quinoa cooks, roast sweet potatoes in the oven at 400°F for about 20 minutes.
- In a large bowl, combine quinoa, sweet potatoes, black beans, corn, and spices.
- Drizzle olive oil and mix well.
- Top with sliced avocado and pumpkin seeds before serving.
