French Onion Beef Short Rib Soup

A comforting and hearty soup that combines the rich flavors of beef short ribs with the sweetness of caramelized onions.

  • 2 pounds beef short ribs
  • 4 large onions, thinly sliced
  • 4 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 8 ounces Gruyère cheese, grated
  • 1 loaf French bread, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large Dutch oven, heat olive oil over medium heat. Add the onions and cook until caramelized.
  3. Add the beef short ribs and sear on all sides.
  4. Deglaze the pot with white wine and add the beef broth, bay leaves, and thyme.
  5. Cover and braise in the oven for 2-3 hours until the meat is tender.
  6. Remove the short ribs, shred the meat, and discard the bones.
  7. Return the shredded meat to the pot and season with salt and pepper.
  8. In separate bowls, place slices of bread and ladle the soup over the top. Sprinkle with grated Gruyère cheese.
  9. Broil until the cheese is bubbly and golden.

Notes

  • Add more broth if you like a thinner soup.
  • Top with fresh herbs for added flavor.
