Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, salt, and xanthan gum.
  2. In another bowl, whisk together the milk, eggs, vanilla extract, and melted butter.
  3. Add the wet ingredients to the dry ingredients and mix until well combined.
  4. Heat oil in a deep fryer or pot to 350°F (175°C).
  5. Using a spoon, drop batter into the hot oil, frying until golden brown on both sides.
  6. Remove beignets from the oil and place them on paper towels to drain.
  7. Dust with powdered sugar before serving.
