  • 2 cups cooked brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheese

Instructions

  1. In a skillet, heat olive oil over medium heat and add chicken breasts seasoned with chili powder, cumin, and garlic powder. Cook until the chicken is fully cooked.
  2. Remove chicken from skillet and let it rest before slicing.
  3. In bowls, layer cooked brown rice, black beans, corn, and diced tomatoes.
  4. Add sliced chicken on top followed by avocado, shredded lettuce, and cheese.
  5. Serve with your choice of salsa or dressing.
