Hearty Black Beans and Rice with Sausage

A delicious and comforting dish combining savory black beans, rice, and sausage.

  • 1 cup black beans
  • 1 cup rice
  • 2 links sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Rinse and soak the black beans in water for at least 4 hours.
  2. In a large pot, sauté onion and garlic until translucent.
  3. Add sausage and cook until browned.
  4. Stir in soaked black beans, rice, chicken broth, cumin, paprika, salt, and pepper.
  5. Bring to a boil, then reduce to a simmer.
  6. Cover and cook for about 30-40 minutes, or until rice and beans are tender.
