Hearty Creamy Ditalini Soup for Chilly Nights

  • 8 ounces ditalini pasta
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook ditalini pasta according to package instructions; drain and set aside.
  2. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  3. In the same pot, add olive oil, onion, and garlic. Sauté until soft.
  4. Pour in chicken broth and bring to a boil.
  5. Add kale and cook for about 5 minutes.
  6. Stir in heavy cream and crumbled turkey bacon.
  7. Mix in cooked ditalini pasta; season with salt and pepper.
  8. Simmer for an additional 5-10 minutes and serve hot.

Notes

  • For a vegetarian option, omit turkey bacon and use vegetable broth.
  • Add extra vegetables like carrots or celery for more flavor.
