High Protein Broccoli Cheddar Soup

A delicious and nutritious soup packed with protein from turkey bacon and cheese, complemented by the goodness of broccoli.

Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat and cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, sautéing until soft.
  3. Add broccoli and chicken broth, bringing to a boil. Reduce heat and simmer until broccoli is tender.
  4. Stir in flour, then gradually add milk, stirring until thickened.
  5. Add cheddar cheese, stirring until melted and combined.
  6. Chop the turkey bacon and stir it into the soup before serving.

Notes

  • For a thicker soup, blend a portion of the broccoli before adding cheese.
  • This soup can be made in advance and reheated.
