Homemade Blueberry Protein Muffins

Delicious and healthy homemade blueberry protein muffins that are easy to make and perfect for breakfast or a snack.

Ingredients

  • 1 cup oats
  • 1/2 cup protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons honey
  • 1/2 cup unsweetened applesauce
  • 1 cup blueberries
  • 1/2 cup almond milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine oats, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, mix honey, applesauce, and almond milk. Stir until well combined.
  4. Gradually add the wet ingredients to the dry ingredients and mix well.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For a sweeter muffin, you can add more honey or maple syrup.
  • Experiment with different fruits or add nuts for extra crunch!
