Huli Huli Chicken

  • 4 pounds whole chicken
  • 1 cup soy sauce
  • 3/4 cup brown sugar
  • 1/2 cup pineapple juice
  • 1/4 cup ketchup
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, mix together soy sauce, brown sugar, pineapple juice, ketchup, garlic, ginger, sesame oil, and black pepper.
  2. Place chicken in a resealable bag and pour marinade over it. Seal and refrigerate for at least 4 hours or overnight.
  3. Preheat the grill to medium heat.
  4. Remove chicken from marinade and grill for 30-35 minutes, turning occasionally, until fully cooked.
  5. Brush chicken with remaining marinade during the last 5 minutes of grilling.
  6. Let chicken rest for 10 minutes before slicing and serving.
