  • 4 medium sweet potatoes
  • 1 cup cranberries
  • 1 cup chopped apples
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and bake sweet potatoes for about 45 minutes or until tender.
  3. Allow sweet potatoes to cool, then slice them in half and scoop out the insides.
  4. In a bowl, mix the sweet potato flesh with cranberries, apples, brown sugar, butter, cinnamon, and nutmeg.
  5. Stuff the mixture back into the sweet potato skins and top with chopped walnuts.
  6. Bake again for 20 minutes.
