  • 2 cups potatoes, cubed
  • 2 cups green beans, trimmed
  • 1 cup peas
  • 1 can diced tomatoes
  • salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onions, carrots, and celery, sauté until the onions become translucent.
  3. Stir in the garlic and cook for another minute.
  4. Add vegetable broth, thyme, bay leaves, potatoes, green beans, peas, and diced tomatoes.
