- 1 cup pumpkin puree
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chocolate chips (optional)
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the pumpkin puree, brown sugar, granulated sugar, softened butter, egg, and vanilla extract until smooth.
- In another bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in chocolate chips if using.
- Drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
