Mamaw’s Chicken and Rice Casserole

Mamaw’s Chicken and Rice Casserole is an easy comfort food that brings warmth and nostalgia to the dinner table.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup long-grain rice
  • 1 can cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, rice, cream of mushroom soup, chicken broth, mixed vegetables, garlic powder, onion powder, paprika, salt, and pepper.
  3. Pour the mixture into a greased 9×13 inch baking dish.
  4. Cover with aluminum foil and bake for 30 minutes.
  5. Remove foil and bake for an additional 15-20 minutes until the rice is tender and the casserole is bubbly.

Notes

  • For extra flavor, add shredded cheese on top during the last 10 minutes of baking.
  • Feel free to mix in your favorite vegetables.
