- 4 large russet potatoes
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 slices turkey bacon
- 1 cup shredded cheese
- 1/4 cup chopped fresh cilantro
- Preheat the oven to 400°F (200°C).
- Wash and poke holes in the potatoes with a fork. Rub with olive oil, salt, and pepper.
- Bake the potatoes for about 45-60 minutes until tender.
- Meanwhile, cook the turkey bacon in a skillet until crispy. Chop into pieces.
- Once the potatoes are cooked, remove them from the oven and let cool slightly.
- Cut the potatoes in half and scoop out some flesh to create space for toppings.
- Mix the scooped potato flesh with cheese, chili powder, garlic powder, onion powder, and crispy turkey bacon.
- Fill the potato skins with the mixture and top with more cheese.
- Return to the oven and bake for an additional 15-20 minutes until the cheese is bubbly.
- Garnish with cilantro before serving.
