Mexican Potatoes

Delicious and easy to make Mexican Potatoes topped with turkey bacon for a delightful twist.

Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 slices turkey bacon
  • 1 cup shredded cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes with a fork. Rub with olive oil, salt, and pepper.
  3. Bake the potatoes for about 45-60 minutes until tender.
  4. Meanwhile, cook the turkey bacon in a skillet until crispy. Chop into pieces.
  5. Once the potatoes are cooked, remove them from the oven and let cool slightly.
  6. Cut the potatoes in half and scoop out some flesh to create space for toppings.
  7. Mix the scooped potato flesh with cheese, chili powder, garlic powder, onion powder, and crispy turkey bacon.
  8. Fill the potato skins with the mixture and top with more cheese.
  9. Return to the oven and bake for an additional 15-20 minutes until the cheese is bubbly.
  10. Garnish with cilantro before serving.

Notes

  • For added creaminess, consider mixing in sour cream with the cheese mixture.
  • These potatoes can be prepped ahead and baked before serving.
