Mexican Street Corn Soup

  • 4 cups corn kernels
  • 1 cup diced turkey bacon
  • 1 tsp smoked paprika
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 lime, juiced
  • 1/4 cup chopped cilantro
  • 1 jalapeño, diced
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add corn, broth, and smoked paprika to the pot and bring to a simmer.
  3. Blend half of the soup until smooth, then return it to the pot.
  4. Stir in heavy cream, lime juice, and season with salt and pepper.
  5. Serve topped with turkey bacon, cilantro, green onions, and jalapeño.

Notes

  • This soup can be made in advance and freezes well.
  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
