  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of mini cupcake liners.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in lemon juice, lemon zest, and vanilla extract until well combined.
  5. Pour the cream cheese mixture over the crust in the liners.
  6. Bake for 20-25 minutes or until set. Let cool and refrigerate before serving.

Notes

  • For a sweeter cheesecake, add more sugar to the filling.
