- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of mini cupcake liners.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in lemon juice, lemon zest, and vanilla extract until well combined.
- Pour the cream cheese mixture over the crust in the liners.
- Bake for 20-25 minutes or until set. Let cool and refrigerate before serving.
