Mouthwatering One Pot Lasagna Soup

A delicious twist on traditional lasagna, made easy in one pot.

  • 8 ounces lasagna noodles
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and chop.
  2. Add ground turkey to the pot and cook until browned.
  3. Add onion and garlic to the pot, sauté until translucent.
  4. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  5. Bring to a simmer, then add broken lasagna noodles.
  6. Cook for about 15 minutes until noodles are tender.
  7. Stir in spinach, ricotta, and half of the mozzarella. Cook until spinach wilts.
  8. Serve hot, garnished with remaining mozzarella and chopped turkey bacon.

Notes

  • For extra flavor, add a dash of red pepper flakes.
  • Feel free to use ground beef instead of turkey.
