Mouthwatering One Pot Lasagna Soup with Turkey Bacon Twist

- 8 ounces lasagna noodles
- 1 pound ground turkey
- 4 slices turkey bacon
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups spinach
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- In a large pot, cook turkey bacon until crispy. Remove and chop.
- Add ground turkey to the pot and cook until browned.
- Add onion and garlic to the pot, sauté until translucent.
- Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Bring to a simmer, then add broken lasagna noodles.
- Cook for about 15 minutes until noodles are tender.
- Stir in spinach, ricotta, and half of the mozzarella. Cook until spinach wilts.
- Serve hot, garnished with remaining mozzarella and chopped turkey bacon.
Notes
- For extra flavor, add a dash of red pepper flakes.
- Feel free to use ground beef instead of turkey.
