One Pot Fall Vegetable Orzo and Chickpeas Recipe

  • 1 cup orzo pasta
  • 1 can chickpeas, drained and rinsed
  • 4 slices turkey bacon, chopped
  • 2 cups vegetable broth
  • 1 cup diced pumpkin
  • 1 cup chopped kale
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add the onion and garlic, sautéing until the onion is translucent.
  3. Stir in the pumpkin and cook for a few minutes.
  4. Add the orzo, chickpeas, vegetable broth, kale, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer until the orzo is cooked.
