Ingredients

  • 4 eggs
  • 1 cup shredded cheese
  • 8 small tortillas
  • 1 tablespoon olive oil

  • Pepper to taste

Instructions

  1. Peel and dice the potatoes, then boil until tender.
  2. In a pan, heat olive oil and sauté the potatoes until golden brown.
  3. In a bowl, whisk eggs, add salt and pepper, then scramble in the pan with the potatoes.
  4. Warm the tortillas in another pan.
