  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until combined.
  6. Fold in walnuts if using.
  7. Pour the batter into a greased 9×13 inch baking dish.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cool completely before frosting.
  10. For the frosting, beat together cream cheese, brown sugar, and vanilla until smooth, then spread over cooled bars.
