- 1 pound turkey bacon
- 1 can pumpkin puree
- 2 cups kidney beans
- 1 cup diced tomatoes
- 1 onion diced
- 2 cloves garlic minced
- 2 cups vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon until crispy. Remove and crumble.
- In the same pot, sauté onions and garlic until translucent.
- Add the crumbled turkey bacon back into the pot, along with the pumpkin puree, kidney beans, diced tomatoes, and vegetable broth.
- Stir in chili powder, cumin, salt, and black pepper.
