Pumpkin Chili

A warm and hearty pumpkin chili that combines the flavors of turkey bacon with rich pumpkin for a comforting dish.

  • 1 pound turkey bacon
  • 1 can pumpkin puree
  • 2 cups kidney beans
  • 1 cup diced tomatoes
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add the crumbled turkey bacon back into the pot, along with the pumpkin puree, kidney beans, diced tomatoes, and vegetable broth.
  4. Stir in chili powder, cumin, salt, and black pepper.
  5. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  6. Serve warm, garnished with your favorite toppings.

Notes

  • This chili can be made a day ahead for even better flavor.
  • Feel free to adjust the spice level to your liking.
