  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder

  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine pumpkin puree, cottage cheese, sugar, eggs, and vegetable oil.
  3. In another bowl, mix together flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
